Ingredients
- 400g Peeled Ginger
- 400g Honey or Sugar
Cooking Instructions
Step 1
Thoroughly wash the peeled ginger under running water to remove any remaining soil. Ensure it’s completely clean before proceeding.

Use the back of a spoon or a knife to gently scrape off the ginger skin. For fresh ginger, scraping with a knife is often the easiest method.

After peeling, rinse the ginger two to three more times with water. Spread the ginger on a sieve and let it air dry in a well-ventilated area, such as a balcony, for about 3 hours. This step helps to reduce moisture content and concentrate the flavor.

While the ginger is drying, sterilize the glass jar(s) you’ll be using for storage by boiling them. Place the jars in cold water and bring to a boil, then let them simmer for 2-3 minutes. Drain the water and ensure the jars are completely dry. Proper sterilization and drying are crucial for preservation.

Once dried, thinly slice the ginger into rounds, and then cut these slices into thin matchsticks (julienne). This shape allows the ginger to meld beautifully with the sweetener.

Fill the sterilized glass jar with the julienned ginger. Pour the honey over the ginger, ensuring a 1:1 ratio by weight (e.g., 400g ginger to 400g honey). This balanced ratio creates a harmonious flavor.

Alternatively, you can slice the ginger into thin rounds and mix them with sugar. (Example: For 750g of ginger, combine 400g julienned ginger with honey and 350g sliced ginger with xylitol sugar.)

In a bowl, combine 350g of sliced ginger with 250g of xylitol sugar. Toss well until the sugar evenly coats the ginger slices. Reserve the remaining 100g of sugar to cover the top.

Carefully pack the sugar-coated ginger slices into the glass jar.

Finally, sprinkle the reserved 100g of sugar evenly over the top layer of ginger. This helps to create a protective seal and prevent the ginger from being exposed to air.
