Main Ingredients
  • 2 bowls of medium anchovies (heads and guts removed)
  • 1/2 bowl of whole garlic cloves (peeled)
  • 3 green chilies
  • 2 red chilies

Cooking Instructions

Step 1

Rinse the medium anchovies lightly under running water and drain them well. Carefully remove the heads and guts, as leaving them in can result in a fishy taste. Heat a pan over medium heat and stir-fry the anchovies for about 3-5 minutes to remove any fishy smell. Transfer the fried anchovies to a sieve and let them cool completely.

Step 2

Heat 5 Tbsp of cooking oil in the same pan over medium-low heat. Add the peeled whole garlic cloves and sauté until they turn golden brown, being careful not to burn them. Once the garlic is lightly browned, add the prepared anchovies and stir-fry together for 1-2 minutes, allowing the garlic aroma to infuse into the anchovies.

Step 3

Reduce the heat to medium-low. Add 2 Tbsp of mentsuyu, 2 Tbsp of gochugaru, and 1 Tbsp of gochujang. Stir-fry quickly to coat the anchovies and garlic evenly with the seasoning mixture.

Step 4

Add 2 Tbsp of sugar and 3 Tbsp of oligosaccharide to enhance the sweetness. Stir and cook, ensuring the savory mentsuyu, garlic, and anchovy flavors meld with the sugar and oligosaccharide to create a delicious sauce.

Step 5

Thinly slice the green and red chilies diagonally. Add the sliced chilies to the pan and stir-fry for about 30 seconds. (Be careful not to overcook them, as they can become mushy.)

Step 6

Continue to stir-fry for another 2-3 minutes, ensuring the seasoning is evenly distributed among the anchovies, garlic, and chilies. Cook until the mixture becomes glossy and the sauce thickens.

Step 7

Finally, increase the heat to high and stir-fry for about 1 more minute to make the anchovies extra crispy. This results in a perfectly cooked Stir-Fried Anchovies with Whole Garlic. Let it cool slightly, then store in an airtight container in the refrigerator for a delicious side dish that keeps well.
