Chicken Skewer Ingredients
  • 4 chicken breasts (approx. 150-200g each)
  • 1 cup milk (for tenderizing and removing odor)
  • Pinch of salt
  • Pinch of black pepper
  • Sesame seeds for garnish

Tteokbokki Skewer Ingredients
  • 20 tteokbokki rice cakes (about 200g)
  • 2 Tbsp chili sauce (such as Sriracha or gochujang-based)
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp corn syrup or honey
  • Olive oil (for grilling the rice cakes)
  • Sesame seeds for garnish

Skewers & Utensils
  • 8 wooden skewers (soak in water beforehand to prevent burning)
  • Oven or air fryer

Flavorful Chicken Marinade
  • 4 Tbsp sugar
  • 1 Tbsp hot sauce
  • 2 Tbsp tomato ketchup
  • 1 Tbsp corn syrup or honey
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 tsp minced garlic

Cooking Instructions

Step 1

First, let’s tenderize and deodorize the chicken breasts. Soak them in milk for about 10 minutes. Milk is excellent at removing any gamey odors. After soaking, rinse the chicken thoroughly under cold water and pat it completely dry with paper towels. Cut the chicken into bite-sized pieces, about 2-3 cm (1 inch) cubes. Season them lightly with a pinch of salt and black pepper. Let them rest for about 10 minutes to absorb the flavors.

Step 2

Now for the star of the show: the delicious chicken marinade! In a mixing bowl, combine 4 Tbsp sugar, 1 Tbsp hot sauce, 2 Tbsp tomato ketchup, 1 Tbsp corn syrup (or honey), 1 Tbsp gochujang, and 1 tsp minced garlic. Mix everything well until smooth. Take about half of this marinade and add it to the seasoned chicken pieces. Gently toss the chicken to ensure each piece is well-coated. Let it marinate for at least 20 minutes to allow the flavors to deepen. (You can reserve the remaining marinade for the tteokbokki skewers).

Step 3

It’s time to assemble the chicken skewers! Thread the marinated chicken pieces onto the pre-soaked wooden skewers. Aim for about 5-6 pieces per skewer, leaving a little space between them so they cook evenly. We’ll be baking these today. Preheat your oven to 200°C (400°F). Place the skewers on a baking sheet lined with parchment paper and bake for approximately 15 minutes, or until the chicken is cooked through and lightly browned. Flipping them halfway through will ensure even cooking.

Step 4

As the chicken skewers are nearing completion, let’s add a finishing touch. Just before taking them out of the oven, you can sprinkle some sesame seeds over the top or add a drizzle of your favorite mustard sauce for an extra kick. Kids especially love this part! This step elevates your chicken skewers to a whole new level of deliciousness.

Step 5

Next, we’ll make the ever-popular tteokbokki skewers! Use ready-to-cook tteokbokki rice cakes. Thread 3-4 rice cakes onto each wooden skewer. Again, ensure they aren’t packed too tightly together.

Step 6

Let’s grill these rice cakes for a delightful chewy and slightly crispy texture (겉바속쫀 – ‘geot-ba-sok-jjon’). Lightly brush both sides of the rice cakes on the skewers with olive oil. Grill them in a preheated oven or air fryer at 190°C (375°F) for about 8 minutes, until they are golden brown and slightly puffed. Using an oven or air fryer is much cleaner and easier than deep-frying!

Step 7

And finally, the grand finale! Once your chicken and tteokbokki skewers are nicely grilled, generously brush the reserved marinade (or your preferred sauce like chili sauce or ketchup) over the tteokbokki skewers. Serve the chicken and tteokbokki skewers together for a colorful and flavorful snack platter. It’s incredibly easy to make, yet so satisfying. Enjoy your homemade delightful skewers!
