Jeyuk Bokkeum (Spicy Stir-fried Pork)
Delicious and Clean Jeyuk Bokkeum Made with Gochugaru

Main Ingredients
- 600g Pork (shoulder or leg)
- 1 Tbsp Brown Sugar (for marinating pork)
- 1 bunch Green Onions (approx. 1 stalk)
- 1 medium Onion
- 2 Red Chili Peppers
- 20g Carrot (approx. 1/4 carrot)
- 1 Tbsp Toasted Sesame Seeds (for garnish)
Spicy & Sweet Stir-fry Sauce
- 6 Tbsp Soy Sauce
- 4 Tbsp Gochugaru (Korean red pepper flakes, adjust to taste)
- 3 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil (preferably perilla oil for nutty flavor)
- 2 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
- 6 Tbsp Soy Sauce
- 4 Tbsp Gochugaru (Korean red pepper flakes, adjust to taste)
- 3 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil (preferably perilla oil for nutty flavor)
- 2 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
Cooking Instructions
Step 1
First, prepare your vegetables. Slice the green onions and red chili peppers diagonally into bite-sized pieces. Slice the onion into thin strips and the carrot into thin rounds or half-moons.
Step 2
In a bowl, combine all the ingredients for the ‘Spicy & Sweet Stir-fry Sauce’: soy sauce, gochugaru, mirin, minced garlic, sesame oil, and oligodang. Whisk everything together until the sugar is dissolved and the sauce is well blended. Making the sauce ahead allows the flavors to meld beautifully.
Step 3
Heat a pan over medium-high heat. Add the 600g of pork and 1 tablespoon of brown sugar for a quick marinade. Stir-fry the pork quickly over high heat to sear the surfaces and lock in the juices. Use chopsticks or a spatula to break up any clumps as you cook.
Step 4
Once the pork is about halfway cooked, add all of the prepared stir-fry sauce to the pan. Continue to stir-fry over high heat, ensuring the sauce coats the pork evenly. Be careful not to let the sauce burn.
Step 5
When the pork is almost fully cooked, add all the prepared vegetables (onion, carrot, green onion, red chili peppers) to the pan. Stir-fry quickly over high heat until the vegetables are tender-crisp and well combined with the pork. Just before turning off the heat, sprinkle with 1 tablespoon of toasted sesame seeds for garnish.
Step 6
Serve this delicious Jeyuk Bokkeum immediately over warm rice. If you have any leftovers, try reheating them the next day. The flavors will deepen overnight, making it even more delicious! Enjoy this hearty and flavorful dish that’s perfect with rice.
