Ingredients
- 1 bowl of black rice (approx. 200g)
- 2 eggs
- 2 servings of kimchi (well-fermented, finely chopped)
- 15 cloves of garlic (thinly sliced)
Seasoning
- 1 tsp oyster sauce
- 1 Tbsp perilla oil
- 1 tsp sesame seeds
- 1 tsp soy sauce
- 1 tsp Muschugu-chu (or salt, to taste)

Cooking Instructions
Step 1
Finely chop the kimchi. If your kimchi is very sour, you can lightly rinse it before chopping. Set aside.

Peel and thinly slice the garlic cloves. Heat a generous amount of cooking oil in a pan over medium-low heat. Fry the garlic slices until they are golden brown and crispy. Be careful not to burn them. Remove the fried garlic from the pan and drain on paper towels to remove excess oil. This step adds a wonderful crunchy texture and nutty aroma.
Step 3
In a bowl, whisk the eggs until well combined. Pour the beaten eggs into a lightly oiled pan over medium heat and scramble them until just cooked but still moist. This will ensure a creamy texture in the fried rice.
Step 4
Wipe the pan clean, then add the perilla oil and heat over medium heat. Add the chopped kimchi and stir-fry until it softens and becomes fragrant, about 2-3 minutes. Add the soy sauce and Muschugu-chu (or salt) and continue to stir-fry for another minute.

Add the cooked black rice to the pan with the kimchi. Break up any clumps of rice with your spatula and stir-fry until the rice is heated through and well combined with the kimchi. Stir in the oyster sauce. Gently fold in the scrambled eggs. Finally, sprinkle with sesame seeds. Serve the kimchi fried rice on a plate and top with the crispy fried garlic.
