Main Ingredients
  • Spaghetti pasta (1 serving)
  • Well-fermented kimchi, 150g
  • Pork belly, 150g
  • Garlic, 5-6 cloves

Cooking Instructions

Step 1

First, thinly slice or mince 5-6 cloves of garlic. If you enjoy a spicy kick, feel free to finely chop some Korean green chili peppers or peperoncino to add along with the garlic.

Step 2

Lightly squeeze out excess juice from the kimchi and chop it into bite-sized pieces, about 2-3 cm. Cut the pork belly into similar bite-sized pieces, about 2-3 cm long, choosing pieces with a good balance of meat and fat.

Step 3

Bring a large pot of water to a rolling boil. Add 1/2 Tbsp of salt to the boiling water. Add the spaghetti pasta and cook for 7-8 minutes, or about 1-2 minutes less than the time indicated on the package. Reserve about 1/2 cup of the pasta water before draining.

Step 4

Once the pasta is cooked al dente, drain it and immediately toss it with 1-2 Tbsp of olive oil. Use a fork or tongs to ensure the pasta is evenly coated. This prevents the noodles from sticking together and adds a lovely flavor.

Step 5

Heat a pan over medium-low heat and add a generous drizzle of olive oil. Add the minced or sliced garlic and sauté until fragrant. Be careful not to burn the garlic; sautéing it gently will release its aromatic essence.

Step 6

Once the garlic is fragrant, add the chopped kimchi and pork belly to the pan. Sprinkle with a pinch of black pepper. Stir-fry over medium heat for about 7-8 minutes, until the kimchi softens and the pork belly is nicely browned. If your kimchi is very sour, a little sugar can be added to balance the flavor.

Step 7

Now, add the cooked spaghetti to the pan with the other ingredients. Stir-fry for 1-2 minutes, ensuring the pasta is well combined with the kimchi and pork belly mixture.

Step 8

Finally, add 1/2 Tbsp of chicken stock to the pan and stir-fry quickly until everything is well combined for a delicious Kimchi Pork Belly Pasta! If you don’t have chicken stock, you can substitute it with 1/2 Tbsp of oyster sauce or soy sauce for added depth of flavor. Garnish with a sprinkle of parsley flakes if desired. Enjoy your meal!
