Chicken Wing Preparation
  • 16-18 chicken wings (drumettes)
  • Generous amount of cornstarch
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/4 cup soju (or clear cooking wine/vodka)

Sweet & Salty Honey Glaze
  • 4 Tbsp soy sauce
  • 2 Tbsp sugar
  • 1.5 Tbsp corn syrup (or honey)
  • 2 Tbsp minced garlic
  • 1/2 cup water

Cooking Instructions

Step 1

Rinse the chicken wings thoroughly. For best results and to remove any gamey odors, soak them in milk for about 30 minutes. (Tip: I skipped this step, and the chicken still turned out great thanks to the soju marinade. If you’re short on time, you can omit the milk soak.)

Step 2

After soaking (or rinsing), pat the chicken wings dry. Sprinkle evenly with 2 tsp of salt and a generous amount of black pepper.

Step 3

Pour 1/4 cup of soju over the seasoned chicken wings. Gently massage the wings with your hands to ensure the seasoning is evenly distributed. Let them marinate for 20-40 minutes to absorb the flavors.

Step 4

Place a generous amount of cornstarch into a resealable plastic bag. Add the marinated chicken wings and seal the bag. Shake well until each chicken wing is thoroughly coated with cornstarch. This coating will ensure a crispy texture.

Step 5

Now, prepare to fry the chicken. You can either deep-fry them in oil or use an air fryer. If using an air fryer, arrange the cornstarch-coated chicken wings in a single layer in the basket.

Step 6

For an even crispier finish in the air fryer, lightly spray or brush the chicken wings with cooking oil. If you don’t have an oil spray, you can wear gloves, dip your hands in oil, and gently pat the wings. (Tip: For extra crispiness, you can lightly dust the wings with a bit more cornstarch after oiling.)

Step 7

Air fry at 180°C (350°F) for approximately 25 minutes, flipping halfway through for even cooking. This process will result in beautifully crispy chicken wings.

Time to make the signature Honey Combo glaze! In a small bowl, combine 4 Tbsp soy sauce, 2 Tbsp sugar, 1.5 Tbsp corn syrup, 2 Tbsp minced garlic, and 1/2 cup water. Whisk until the sugar is dissolved and all ingredients are well combined.

Pour the prepared glaze into a wide pan and bring it to a simmer over medium heat. Once the sauce is bubbling, reduce the heat to low. Add the fried chicken wings to the pan and toss them gently to coat each piece evenly with the glaze. Stir constantly to prevent burning.

Step 10
