  • 2 cups Sushi Rice
  • 3 sheets Dried Kombu (4x4cm)
  • 1/4 Onion
  • A small bunch of Scallions
  • A pinch of Herb Salt
  • Store-bought Teriyaki Sauce

Sushi Vinegar (Sushi-zu)

  • 4 Tbsp Rice Vinegar
  • 1 tsp Salt

Cooking Instructions

Step 1

Lay out the thinly sliced beef brisket on a plate lined with paper towels. Sprinkle evenly with herb salt to season. This simple seasoning will enhance the natural savory flavor of the brisket.

Rinse 2 cups of sushi rice thoroughly. Place it in your rice cooker, add slightly less water than usual, and add the dried kombu sheets. Cook the rice until it’s fluffy and slightly firm to the bite – perfect for sushi.

Thinly slice the onion. To remove its sharp bite, soak the sliced onion in cold water for about 10 minutes. Afterward, drain it thoroughly.
