Ingredients
  • Mentaiko (spicy cod roe) – 1.5 pieces
  • Mayonnaise – 1 Tbsp
  • Olive oil – 0.5 Tbsp

Cooking Instructions

Step 1

Gently rinse the mentaiko under cool running water to remove any excess seasoning from the surface. If you prefer a saltier flavor, you can skip this step. After rinsing, carefully pat the mentaiko dry with paper towels.

Step 2

Place the dried mentaiko into a clean plastic bag (like a zip-top bag). Add half a tablespoon of olive oil. Gently massage the bag to coat the mentaiko evenly with the oil, being careful not to break the roe. (Tip: Don’t discard this bag just yet!)

Step 3

Place the oiled mentaiko in your air fryer basket. Cook at 140°C (285°F) for 5 minutes. After 5 minutes, carefully flip the mentaiko and cook for another 5 minutes at 140°C (285°F). For a firmer texture, you can increase the temperature to 180°C (355°F) and cook for 5 minutes per side.

Step 4

Ta-da! You’ll see the beautifully cooked mentaiko. It should be slightly crisp on the outside and wonderfully tender and moist on the inside.

Step 5

Now, let’s use that same plastic bag from before. Add 1 tablespoon of mayonnaise to the bag that the mentaiko was cooked in. Snip off a small corner of the bag to create a piping nozzle.

Step 6

Place the cooked mentaiko on top of a bowl of warm rice. Use the prepared bag to artfully drizzle the mayonnaise over the mentaiko and rice in a zigzag pattern. For extra flavor, consider adding some shredded seaweed or sesame seeds.
