Here’s an easy recipe for a fragrant and moist banana pound cake, perfect for using up ripe bananas. The soft texture is enhanced by the addition of crunchy almond slices, making it a delightful homemade treat to enjoy with coffee or tea.
Ingredients- 100g unsalted butter, softened
- 120g granulated sugar
- 2 large eggs, room temperature
- 5 drops vanilla extract
- 200g cake flour
- 1 tsp baking powder
- 1 tsp salt
- 100g heavy cream
- 2 ripe bananas
- 20g sliced almonds

Step 1
First, melt the 100g of butter in the microwave for about 1 minute until softened. It’s best if the butter is soft rather than completely liquid.

Add 120g of sugar to the melted butter and mix well with a whisk or spatula until the sugar is incorporated. Continue mixing until the butter and sugar mixture is slightly fluffy.

Prepare 2 ripe bananas, the key ingredient for the banana bread. Peel them, chop them into bite-sized pieces, and add them to the batter.
