Ingredients
  • 100g unsalted butter, softened
  • 120g granulated sugar
  • 2 large eggs, room temperature
  • 5 drops vanilla extract
  • 200g cake flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 100g heavy cream
  • 2 ripe bananas
  • 20g sliced almonds

Cooking Instructions

Step 1

First, melt the 100g of butter in the microwave for about 1 minute until softened. It’s best if the butter is soft rather than completely liquid.

Step 2

Add 120g of sugar to the melted butter and mix well with a whisk or spatula until the sugar is incorporated. Continue mixing until the butter and sugar mixture is slightly fluffy.

Step 3

Prepare 2 ripe bananas, the key ingredient for the banana bread. Peel them, chop them into bite-sized pieces, and add them to the batter.

Step 4

Using a fork, mash the chopped bananas until they are completely smooth and lump-free. The mashed bananas will blend well into the batter, creating a wonderfully smooth texture.

Step 5

Now, crack in the 2 room-temperature eggs and add 5 drops of vanilla extract for extra fragrance. Whisk everything together until well combined.

Sift 200g of cake flour into the batter. It’s important to sift the flour to prevent lumps. Add 1 tsp of baking powder and 1 tsp of salt on top of the sifted flour.

Gently fold the sifted dry ingredients into the wet ingredients using a spatula. Be careful not to overmix, as this can make the cake tough; mix just until no dry flour streaks remain. Finally, add 100g of heavy cream for added moisture and gently mix to combine.

Pour the batter into your prepared pound cake pan. To achieve a nice shape after baking, use a spatula to create a slight dip in the center of the batter and build up the edges slightly higher.

Sprinkle 20g of sliced almonds evenly over the batter for a nutty flavor and texture. Bake in a preheated oven at 180°C (350°F) for about 45 minutes, or until golden brown. Baking time may vary depending on your oven.

To check if the cake is done, insert a skewer or toothpick into the center. If it comes out clean with no batter attached, it’s ready. If there’s still batter, bake for an additional 5 minutes.
