Easy Oatmeal Banana Bread Recipe Using a Rice Cooker
This is a moist and hearty banana bread made with ripe bananas and nutritious oatmeal. It’s perfect as a breakfast substitute or a snack. Using a rice cooker makes it easy to prepare without an oven. The subtle cinnamon aroma and the nuttiness of the walnuts create a richer flavor.
Main Ingredients
- 1 ripe banana
- 1 handful of nuts (walnuts, almonds, pecans, etc.)
- 100g rolled oats
- 2 eggs
- 0.5 tsp salt
- 1 Tbsp cooking oil
- 5g baking powder
- 2g ground cinnamon
- 30g sugar
- 60g heavy cream (or milk)
- 5 drops vanilla extract (optional)
Cooking Instructions
Step 1
For the best texture, use a banana that is very ripe; it will mash more easily. To ripen a banana faster and deepen its sweetness, seal it in a ziplock bag and store it at room temperature. Avoid refrigerating, as this can cause premature browning.
Step 2
In a bowl, combine 100g of rolled oats, 60g of heavy cream (or milk), and 2 eggs. Mix well and let it sit for a bit to allow the oats to soak and soften. If you prefer a smoother texture without any chewiness, you can grind the oats beforehand.
Step 3
In a separate bowl, add 1 mashed ripe banana, 30g of sugar, 2g of ground cinnamon, 5g of baking powder, 0.5 tsp of salt, and 5 drops of vanilla extract (if using). Mix everything together until well combined.
Step 4
Break about a handful of your chosen nuts (like walnuts, almonds, or pecans) into bite-sized pieces and add them to the batter. Stir gently to distribute the nuts evenly throughout the mixture.

Lightly grease the inside of your rice cooker pot with 1 Tbsp of cooking oil. Use a paper towel to wipe the bottom and sides of the pot thoroughly. This step ensures the bread will release cleanly after baking.
Step 6
Pour the prepared batter into the greased rice cooker pot and spread it evenly. Select the ‘Steam’ or ‘Cake’ function on your rice cooker and set it to cook for 20 minutes.
Step 7
After the initial 20 minutes, carefully open the rice cooker to check the bread. Insert a toothpick or skewer into the center; if it comes out clean, the bread is done. If there is still batter sticking to it, set the ‘Steam’ or ‘Cake’ function again for another 20 minutes.
Step 8
Once the bread is fully cooked, carefully remove the inner pot from the rice cooker and invert it onto a serving plate. The bread should slide out easily due to the greasing.
