I started making this 100% whole wheat bread for my diet, and now it’s become a daily breakfast staple for my health! It’s incredibly satisfying, rich in protein, and has a wonderfully nutty and mild flavor that makes you crave more. This is a bread you’ll reach for again and again.
Ingredients
- Whole wheat flour 270g
- Instant dry yeast 2.5g
- Stevia or sugar 3g
- Lukewarm water 270ml
- Salt 2 pinches
- Sunflower seeds 30g
Cooking Instructions
Step 1
First, accurately measure out 270g of whole wheat flour. This amount will yield a loaf of bread approximately the size of a standard loaf pan, perfect for sharing with your family.
Step 2
To activate the yeast, dissolve 2.5g of instant dry yeast and 3g of stevia or sugar in 270ml of lukewarm water. You can substitute honey for sugar if you prefer. Stevia is a great option if you’re looking to reduce sugar intake.

Add 2 pinches of salt to the measured 270g of whole wheat flour. Salt enhances the bread’s flavor and helps strengthen the dough structure.
Step 4
Add 30g of sunflower seeds for a delightful nutty texture and enhanced flavor once the bread is baked. Feel free to use your favorite nuts like walnuts or almonds instead.
Step 5
In a bowl with the whole wheat flour and salt, gradually pour in the yeast mixture prepared in step 1, about 3 to 4 times. Use a spatula to mix until no dry flour is visible. Whole wheat flour has lower gluten content, so avoid over-kneading to prevent the bread from becoming tough. Simply mix until just combined.
Step 6
Proper fermentation is key to a successful whole wheat bread! Cover the bowl with a damp cloth and let it undergo its first rise in a warm, draft-free place for about 2 hours. The dough should increase in volume by 1.5 to 2 times. This indicates the yeast is active.
Step 7
After the first rise, gently deflate the dough by pressing down on it to release large air pockets. Then, shape the dough by folding the edges towards the center and gently rolling it into a ball, creating a smooth surface. This process helps to refine the crumb structure.
Step 8
The second rise is similar to the first: cover the shaped dough with a damp cloth and let it rise in a warm place for about 1 hour. Once the dough has visibly puffed up again, place it in your preheated air fryer basket. Bake at 190°C (375°F) for 40 minutes. It’s a good idea to check on the bread halfway through baking to ensure it doesn’t get too dark.
