Ingredients for Baked Sweet Potato Dessert
  • 1 medium-sized sweet potato
  • 1 container plain yogurt (thick texture recommended)
  • A little frozen blueberries
  • A little oatmeal
  • A little chia seeds
  • A little walnuts
  • A little maple syrup
  • A little cinnamon powder

Cooking Instructions

Step 1

Preheat your oven to 200°C (400°F). Wash the sweet potato thoroughly and place it in the preheated oven. Bake for approximately 1 hour, or until a fork can easily pierce through it. The baking time may vary depending on the size of the sweet potato.

Step 2

Once baked, carefully remove the sweet potato from the oven and let it cool slightly. Be cautious as it will be very hot.

Step 3

Once the sweet potato has cooled enough to handle, slice it in half lengthwise. Cutting it while still warm will make it easier to scoop.

Step 4

Scoop out some of the flesh from the center of each sweet potato half to create a hollow, like a small bowl. Generously fill this hollow with thick, plain yogurt. The creamy texture and tangy flavor of the yogurt complement the sweetness of the baked sweet potato beautifully.

Step 5

Top the yogurt with a desired amount of frozen blueberries. The burst of tartness and refreshing chill from the blueberries adds another layer of flavor and texture contrast.

Step 6

For an added crunch, you can lightly toast the oatmeal. In a small pan, add the oatmeal with a drizzle of maple syrup and a sprinkle of cinnamon powder. Toast over low heat for a few minutes until lightly crispy and fragrant. Alternatively, you can skip this step and sprinkle the raw oatmeal.

Step 7

Sprinkle the toasted (or raw) oatmeal over the yogurt. Add some roughly chopped walnuts for a nutty crunch. Finally, sprinkle with chia seeds for extra texture and nutrients. Your beautiful and delicious baked sweet potato dessert is ready!

Step 8

Enjoy the wonderful combination of warm, sweet baked sweet potato, cool tangy yogurt, refreshing blueberries, and crunchy nuts! This dessert pairs perfectly with a warm cup of coffee or tea.
