  • 1/4 onion
  • 1 Tbsp chopped scallion
  • 1 tsp minced garlic

  • 2 Tbsp sesame oil
  • 2 Tbsp ground perilla seeds (Deulkkae-garu)
  • 1 cup mushroom soaking water (approx. 200ml)
  • A pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

Begin by preparing the shiitake mushrooms, the star of this dish. If using sliced dried shiitake, gently rinse them under running water to remove any dust. Then, soak them in lukewarm water for about 20 minutes until they become soft and pliable. (Tip: Avoid using hot water as it can diminish the mushroom’s natural fragrance.)

Step 2

While the mushrooms are soaking, prepare the aromatic vegetables that will enhance the dish’s flavor. ① Finely julienne the onion. ② Have your chopped scallions and minced garlic ready. ③ Measure out 2 tablespoons of ground perilla seeds; having everything prepped makes the cooking process smoother.

Step 3

Now, let’s start stir-frying! Heat a pan over medium heat and add 2 tablespoons of sesame oil. Add the julienned onions and sauté them until they become translucent and release their sweet aroma.

Step 4

Once the onions are fragrant and softened, add the chopped scallions and minced garlic. Stir-fry for about 1 minute more, allowing the pungent aroma of garlic and scallions to meld with the oil.

Squeeze out the excess water from the rehydrated shiitake mushrooms and slice them into bite-sized pieces (about 1 cm thick). Add them to the pan and stir-fry together with the onions, scallions, and garlic. Continue stir-frying until the mushrooms are lightly browned and slightly tender.

When the mushrooms are partially cooked, add 1.5 tablespoons of soup soy sauce (Guk-ganjang) for a deep, savory flavor that complements the mushrooms beautifully. Stir well to ensure the soy sauce is evenly distributed.

Next, pour in 1 cup (approximately 200ml) of the water used to rehydrate the shiitake mushrooms. This mushroom broth is rich in flavor and will add depth to the stir-fry.

Bring the mixture to a simmer and cook until the liquid reduces to about 3 tablespoons, leaving a rich sauce. Be careful not to over-reduce, which can make the dish dry. Once the sauce has thickened, stir in the 2 tablespoons of ground perilla seeds.

Step 9

Stir continuously to ensure the perilla powder is well incorporated and doesn’t clump. Cook for another minute or so until the nutty aroma intensifies and the mushrooms are coated in the delicious sauce. Turn off the heat.
