Essential Ingredients
- 1 Tbsp Soybean Paste (Doenjang)
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Sugar
- 1 Tbsp Corn Syrup (or Oligodang)
- 1 Tbsp Soy Sauce
- 1 Tbsp Rice Wine (Cheongju)
- 3g Black Pepper (approx. 1/2 tsp)
- 300g Pork (e.g., Pork Belly or Neck)
- 1/2 Leek (or Green Onion)
Cooking Instructions
Step 1
To make delicious stir-fried pork, cut the pork into bite-sized pieces (about 2-3 cm). Using cuts with a good balance of fat and lean meat will enhance the flavor.
Step 2
Let’s make the rich soybean paste sauce! In a bowl, combine 1 Tbsp soybean paste, 1 Tbsp minced garlic, 1/2 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp soy sauce, 1 Tbsp rice wine, and 3g black pepper. Stir well until all ingredients are evenly mixed to create the sauce. If you like a bit of spice, you can add a touch of gochujang (Korean chili paste) or chili powder.
Step 3
Add the prepared pork to the rich soybean paste marinade and mix thoroughly. Ensure the pork is evenly coated with the sauce. Let it marinate in the refrigerator for at least 30 minutes. If you have time, marinating for an hour or longer will allow the flavors to penetrate deeper, making it even more delicious.
Step 4
Leeks are a great vegetable to pair with pork. Prepare 1/2 leek by slicing it lengthwise into thin strips, about 0.5 cm thick. Soaking these leek strips in cold water for about 10 minutes will reduce their pungent flavor and enhance their crispness. Adding them towards the end of cooking will cut through richness and add a lovely aroma.
Step 5
Now, heat a pan and add the marinated pork to cook. Cooking over medium heat allows the pork to cook through thoroughly without burning. Once the pork is golden brown, add the sliced leeks and stir-fry them together. Spoon any sauce that accumulates in the pan over the pork as it cooks for an extra burst of flavor. Enjoy this delicious dish with a bowl of warm rice!
