Step 1

Today, I’ll guide you through preparing, thoroughly washing, and perfectly blanching broccoli, making it a delightful treat when dipped in tangy ‘cho-gochujang’ (Korean red pepper paste sauce). Let’s achieve that wonderfully crisp texture at home!

Step 2

First, to ensure any residual pesticides or impurities are completely removed, immerse the entire broccoli head in clean water mixed with 2 tablespoons of vinegar for at least 1 minute. This step helps guarantee that your broccoli is safe and clean to enjoy.

Step 3

Now for the main washing process. In a large bowl, add plenty of water, then stir in 1 tablespoon of flour and 1 tablespoon of coarse salt until dissolved. Flour and salt are excellent for effectively removing even microscopic dirt particles clinging to the broccoli’s surface. Submerge the broccoli in this cleaning solution and gently rub its florets and stem, stirring occasionally, to thoroughly clean every nook and cranny.

Step 4

After washing with flour and salt, rinse the broccoli multiple times under running clean water. Once rinsed, fill a pot with ample water and bring it to a rolling boil. As the water starts boiling, add 1 teaspoon of regular salt. Adding a little salt helps maintain the broccoli’s vibrant green color.

Once the water is at a vigorous boil, carefully add the prepared broccoli. The key here is to blanch for a very short duration, about 15 to 20 seconds. This precise timing ensures the broccoli is just beginning to cook while retaining its signature crispness. Make sure not to exceed this time!

Step 6

Immediately after blanching, remove the broccoli and plunge it into a bowl of ice-cold water. This sudden cooling stops the cooking process, preventing the broccoli from becoming mushy and maximizing its crisp texture. After rinsing in cold water, drain thoroughly in a colander.

Step 7

Voilà! You now have perfectly blanched broccoli that is neither too soft nor undercooked. It’s ready to be used in salads or various dishes, preserving its fresh, vibrant flavor. Properly stored in the refrigerator, it will stay fresh for 2-3 days.
