Main Ingredients
  • 200g raw peanuts (with shells)
  • 1 Tbsp cooking oil

Braising Sauce
  • 4 Tbsp soy sauce (Korean soup soy sauce recommended)
  • 6 Tbsp water
  • 1 Tbsp mirin (rice wine)
  • 2 Tbsp sugar
  • 1 Tbsp corn syrup (or oligosaccharide)
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

First, wash the raw peanuts thoroughly under running water. Blanch them in boiling water for about 1 minute, then immediately rinse them in cold water and drain well. This step helps to remove any bitterness and allows the sauce to absorb better.

Step 2

Heat a pan over medium-low heat and add 1 tablespoon of cooking oil. Add the drained peanuts and stir-fry for 1-2 minutes until fragrant. This lightly toasting enhances their nutty flavor and helps them hold their shape during braising. Once toasted, add all the braising sauce ingredients (soy sauce, water, mirin, sugar, corn syrup) to the pan and bring to a boil over high heat.

Step 3

Once the sauce starts boiling, maintain high heat for 1-2 minutes, then reduce the heat to medium. Continue to simmer and stir the peanuts frequently to prevent them from sticking to the bottom of the pan. As the sauce bubbles vigorously and starts to foam, spoon some of the sauce over the peanuts; this will give them a beautiful shine. Do not leave the pan unattended and monitor the heat closely as the sauce thickens. Tip: When the sauce is almost reduced, lower the heat to low and continue to stir-fry for another 2-3 minutes for a richer flavor.

Step 4

Finally, just before turning off the heat, sprinkle a pinch of sesame seeds over the peanuts for an extra nutty aroma. This completes your delicious Peanut Jorim! The flavor deepens as it cools down. Let the peanuts cool completely before serving.
