Step 1

First, carefully separate the kernels from the cooked corn cobs. You can do this by holding the cob and running a knife down the sides to release the kernels easily.

Next, lightly mash about half of the separated corn kernels using the back of a knife or the side of the blade. This technique allows you to enjoy both the signature popping texture of the corn and the creamy flavor as it spreads, making the fritters even more delicious.

Place all the corn kernels (both mashed and whole) into a large bowl. Add a pinch of salt for seasoning, then add the fried flour and cornstarch. Pour in the cold water, 6 tablespoons at a time, and mix everything thoroughly until you have a smooth batter. The batter should be thick enough to coat the back of a spoon, but not too stiff.

Step 4
