  • 1 zucchini
  • A small piece of carrot (julienned)
  • 1/2 onion (julienned)
  • 1/2 red chili pepper (finely chopped)
  • 3 Tbsp cooking oil

Stir-fry Seasoning
  • 1 Tbsp minced garlic
  • 1 Tbsp salted shrimp (flesh only)
  • 1 Tbsp sesame oil
  • 5 Tbsp water
  • 1 Tbsp toasted sesame seeds
  • 1 Tbsp cooking wine (like mirin)

Cooking Instructions

Step 1

First, wash the zucchini thoroughly and slice it into 0.5cm thick half-moon shapes. Julienne the carrot and onion, and finely chop the red chili pepper (removing seeds if desired) for a pop of color.

Step 2

Heat 3 tablespoons of cooking oil in a pan over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant. Be careful not to burn the garlic; a gentle sauté is key.

Step 3

Once the garlic is fragrant, add all the prepared zucchini, carrot, onion, and red chili pepper to the pan. Stir-fry them lightly to prevent sticking.

Step 4

Now, add all the stir-fry seasoning ingredients: salted shrimp (flesh only), water, and cooking wine. Stir well to combine the seasonings evenly with the vegetables. The salted shrimp adds a wonderful umami depth.

Step 5

Once all ingredients and seasonings are mixed, cover the pan with a lid and cook over low heat for about 2-3 minutes. This steaming process ensures the zucchini becomes tender while retaining its crispness.

Step 6

After cooking for about 2 minutes and 30 seconds, lift the lid. You’ll see the zucchini is tender yet still pleasantly firm. Sprinkle with 1 tablespoon of toasted sesame seeds for a nutty finish. Your delicious stir-fried zucchini is ready!
