Here’s a super simple Dubu Kimchi recipe using aged kimchi from your fridge that you can make in just 10 minutes. Stir-fried kimchi with a sweet and spicy flavor, paired with soft tofu, creates a delightful combination that pairs perfectly with makgeolli and serves as a satisfying one-dish meal.

  • Aged Kimchi 400g (well-fermented and crisp)
  • Tofu 1 block

Kimchi Seasoning & Stir-fry Ingredients

  • Soy Sauce 1 Tbsp (Korean or regular soy sauce)
  • Plum Extract 1 Tbsp (sweetness adjustable)
  • Sugar 1 Tbsp (adjust based on kimchi’s sourness)
  • Minced Garlic 1 Tbsp
  • Cheongyang Pepper 1 (optional, for spiciness)
  • Vegetable Oil 2 Tbsp
  • Sesame Oil 2 Tbsp (for nutty flavor)
  • Sesame Seeds (for garnish)
  • Chopped Green Onion (for garnish, optional)

Cooking Instructions

First, prepare one block of tofu. Gently blanching the tofu in boiling water makes it firmer and allows it to be served warm. Place the tofu in boiling water for about 2-3 minutes, then drain it on a sieve. Cut the tofu into bite-sized pieces, about 2-3cm squares.

Rinse the well-fermented aged kimchi (400g) lightly under running water to slightly reduce its sourness, then cut it into bite-sized strips, about 2cm wide. Heat a wide pan over medium heat, add the cut kimchi, vegetable oil (2 Tbsp), and sesame oil (2 Tbsp). Stir-fry for about 2-3 minutes until the kimchi softens. Using sesame oil along with vegetable oil adds a richer nutty aroma.

Once the kimchi has softened a bit, add minced garlic (1 Tbsp), sugar (1 Tbsp), soy sauce (1 Tbsp), and plum extract (1 Tbsp). Stir well to combine the kimchi and seasonings, and continue to stir-fry for another 2-3 minutes. If your kimchi is very sour, you might want to increase the amount of sugar slightly.

For an extra spicy kick, finely chop one Cheongyang pepper and add it to the pan, stir-frying it with the kimchi. You can also use regular red or green peppers if preferred. Stir-fry for another minute until all ingredients are well incorporated, completing the flavor of the stir-fried kimchi.
