Ingredients
  • 3 handfuls of dried pollack (about 50g)
  • 100g dried seaweed
  • 3 Tbsp minced garlic
  • 3 Tbsp sesame oil
  • 3 Tbsp tuna extract (or fish sauce)
  • Salted soy sauce to taste
  • 5 liters of water

Cooking Instructions

Step 1

First, lightly rinse the dried pollack in cold water to soften it, then squeeze out any excess moisture. Cut it into bite-sized pieces with scissors; this helps the flavor infuse better into the soup.

Step 2

Place the dried seaweed in a bowl and soak it in cold water for about 20 minutes until rehydrated. Rinse the rehydrated seaweed several times under running cold water to remove any impurities. Squeeze out the water and chop it into small pieces.

Step 3

Heat 3 tablespoons of sesame oil in a pot over medium-low heat. Add the prepared dried pollack and sauté until fragrant, making sure it doesn’t burn. Stirring well will bring out the umami flavor of the pollack.

Step 4

Once the pollack is nicely sautéed, add the rehydrated seaweed and stir-fry them together. If the seaweed starts to stick to the bottom of the pot, add a tablespoon or two of water at a time while continuing to stir until the seaweed softens.

Step 5

Pour 5 liters of refreshing water into the pot with the sautéed pollack and seaweed. Bring to a boil over high heat. Leaving the lid off while boiling will result in a clearer, more refreshing broth.

Step 6

Once the soup comes to a rolling boil, reduce the heat to medium. Add 3 tablespoons of minced garlic and let it simmer gently to allow the flavors to meld. Finally, season with 3 tablespoons of tuna extract and a little salted soy sauce to taste. This will complete your deeply flavorful and refreshing dried pollack and seaweed soup. Adjust seasoning with more salted soy sauce or salt as needed.
