Simple Recipe for Chogye Guksu with Chicken Breast

Main Ingredients
- 1 Chicken breast (approx. 150g)
- 1 serving Noodles (thin wheat noodles) (approx. 100g)
- 1/4 Cucumber
- 1/4 Red bell pepper
- 1/2 Hard-boiled egg
- 1 knob of Butter (for cooking chicken breast)
Seasoning and Broth
- 1 pack Store-bought cold noodle broth (approx. 290g)
- 2 Tbsp Vinegar
- 1 Tbsp Sugar
- 1 tsp Mustard (adjust to taste)

Cooking Instructions
Step 1
First, prepare 1 pack of store-bought cold noodle broth. Nowadays, there are many delicious cold noodle broths available, making it convenient to use.
Step 2
In the prepared cold noodle broth, add 2 tablespoons of vinegar for a tangy flavor and 1 tablespoon of sugar for sweetness. Stir thoroughly. This seasoned broth can be placed in the freezer to slightly freeze, which will result in an even more refreshing and delicious Chogye Guksu. If the broth’s seasoning is lacking, you can add a little tuna extract (chamchi aekjeot) for an extra umami boost.
Step 3
Now, it’s time to cook the chicken breast. Melt 1 knob of butter in a pan, then place the chicken breast in it and cook until golden brown on both sides. Using butter adds a richer, more savory flavor to the chicken breast, making it more tender.
Step 4
Once the chicken breast is cooked, let it cool slightly, then shred it into thin strips. Wash the cucumber and red bell pepper and julienne them thinly. Cut the hard-boiled egg in half for garnish.
Step 5
Boil the noodles in plenty of water. When the water comes to a boil, add a splash of cold water. Repeat this process 2-3 times to achieve a chewier texture. Once the noodles are cooked, rinse them under cold water to remove excess starch, then gently rub them while rinsing to wash away any stickiness and drain well.
Step 6
Arrange the cooked noodles attractively in a serving bowl. Top with the julienned cucumber, red bell pepper, shredded chicken breast, and the halved hard-boiled egg. Finally, pour the chilled, slightly frozen broth generously over everything. For an extra zing, add 1 teaspoon of mustard to your liking.
