Refreshing Kimchi Cold Noodles (Kimchi Mari Guksu)
Easy Homemade Kimchi Cold Noodles with Store-Bought Broth for a Hot Summer Day
Beat the heat with this simple and delicious Kimchi Mari Guksu! We’re using convenient store-bought Naengmyeon broth to make this refreshing noodle dish quickly and easily at home.
Main Ingredients
- 2 servings of Jungmyeon noodles (approx. 200g)
- 2 packs of store-bought Naengmyeon broth
- 2 hard-boiled eggs
- 1/2 cucumber
Seasoned Kimchi Ingredients
- 1/4 head of well-fermented kimchi (without excess liquid)
- 1/3 Tbsp sugar
- 0.5 Tbsp sesame oil
- 0.5 Tbsp toasted sesame seeds
- Pinch of black pepper

Cooking Instructions
Step 1
First, prepare 2 servings of Jungmyeon noodles. Bring a large pot of water to a rolling boil and add the noodles. When the water starts to boil vigorously again, add about half a cup of cold water. Repeat this process two more times. On the third boil, the noodles should be perfectly cooked and chewy. Turn off the heat.
Step 2
Immediately rinse the cooked noodles under cold running water to remove all the heat. Drain them thoroughly in a colander to prevent them from becoming mushy and ensure a better texture.
Step 3
Wash half a cucumber and julienne it into thin, fine strips. These will add a refreshing crunch to your noodles.

Boil 2 eggs until hard, peel them, and cut each in half. These will serve as a beautiful and tasty garnish.

Finely chop about 1/4 head of well-fermented kimchi. You can rinse it lightly under water if it’s too sour. In a bowl, combine the chopped kimchi with 1/3 Tbsp sugar, 0.5 Tbsp sesame oil, and 0.5 Tbsp toasted sesame seeds.

Add a tiny pinch of black pepper to the kimchi mixture. Gently mix everything together until the seasonings are evenly distributed. This seasoned kimchi is key to the dish’s flavor!

Divide the drained noodles evenly between serving bowls. Pour one pack of the chilled Naengmyeon broth over the noodles in each bowl. For an extra cold dish, make sure the broth is well-chilled, perhaps even slightly slushy.

Now it’s time to add the toppings! Generously arrange the julienned cucumber, halved hard-boiled eggs, and the seasoned kimchi over the noodles. Feel free to add a splash of vinegar or a dollop of mustard to your liking.
