Main Ingredients
  • Dried shredded squids (Jimmichae) – 1 handful (approx. 50g)

Seasoning Ingredients
  • Gochujang (Korean chili paste) – 1 Tbsp
  • Gochugaru (Korean chili flakes) – 1 tsp
  • Soy sauce (jin-ganjang) – 1 Tbsp
  • Corn syrup (mulyeot) – 1 Tbsp
  • Sesame seeds, crushed (kkaesogeum) – 1/2 Tbsp

Cooking Instructions

Step 1

First, prepare the dried shredded squids. Cut the jimmichae into bite-sized pieces, about 5-7 cm long. If they are too long, they can be difficult to eat.

Step 2

To remove any undesirable flavors and potential impurities, and to soften the jimmichae, briefly blanch it in boiling water for about 1 minute. Be careful not to over-blanch, as it can disintegrate.

Step 3

Rinse the blanched jimmichae lightly under cold water, then squeeze out as much water as possible with your hands. Any remaining water can make the seasoning diluted or the dish mushy.

Step 4

Now, let’s make the delicious seasoning. In a bowl, combine 1 Tbsp gochujang, 1 tsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp corn syrup, and 1/2 Tbsp crushed sesame seeds. Mix well with a spoon or spatula to create the seasoning paste.

Step 5

Once the seasoning paste is well combined, add the drained jimmichae to the bowl. Use your hands to gently mix and coat the jimmichae with the seasoning. It’s important to ensure the seasoning is evenly distributed throughout.

Step 6

When the seasoning is evenly absorbed by the jimmichae, your delicious stir-fried dried shredded squids are ready! If you plan to eat it right away, you can add a little sesame oil to your preference. However, if you intend to store it for a few days, it’s recommended not to add sesame oil. This is because stored jimmichae with sesame oil can develop an ‘off’ or stale flavor over time. Enjoy your flavorful dish!
