Salad Ingredients
  • 100g cocktail shrimp
  • 1/2 cucumber
  • 1/2 Korean chili pepper (cheongyang pepper)
  • 1/4 onion

Shrimp Seasoning
  • 1 pinch of salt
  • 1 pinch of black pepper

Refreshing Mediterranean Dressing
  • 2 Tbsp vinegar
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp olive oil

Cooking Instructions

Step 1

First, blanch the cocktail shrimp in hot water for a moment, then rinse under cold water and pat dry thoroughly. Be careful not to overcook, as the shrimp can become tough.

Step 2

Season the dried shrimp with a pinch of salt and a pinch of black pepper. This simple seasoning enhances the shrimp’s natural flavor.

Step 3

Wash the cucumber thoroughly. Trim off the ends, then cut it in half lengthwise. Use a spoon to scoop out and discard the seeds. Removing the seeds prevents the salad from becoming watery.

Step 4

Slice the seeded cucumber thinly on the diagonal (half-moon shape). Aim for bite-sized pieces that will look appealing in the salad.

Finely chop the Korean chili pepper after removing its stem and seeds. Adjust the amount according to your spice preference, or omit it if you prefer less heat.

Peel and wash the onion, then slice it thinly into strips (julienne). This will add a crisp texture to your salad.

To mellow the pungent flavor of the raw onion, soak the julienned onion in cold water for about 5 minutes. Afterward, drain it well. This step makes the raw onion much more palatable.

Now, let’s prepare the delicious dressing. In a small bowl, combine 2 tablespoons of vinegar, 1 tablespoon of soy sauce, and 1/2 tablespoon of sugar. Stir until the sugar is completely dissolved.

To the dressing mixture, add 1/2 tablespoon of oyster sauce and 1 tablespoon of olive oil. Whisk everything together until well combined and emulsified.
