Savory and Tangy Sea Purslane Salad
A super simple side dish recipe using fresh sea purslane, capturing the essence of the sea. Its crisp texture and sweet-and-sour dressing make it a perfect accompaniment to rice or a delightful snack with drinks. Try it when your appetite is low during the summer!

- 250g Sea Purslane (cleaned and trimmed)

- 1/2 Tbsp Anchovy Sauce (or fish sauce)

Cooking Instructions
Step 1
First, prepare the fresh sea purslane. It’s crucial to rinse it thoroughly under running water multiple times to remove any dirt or debris. Pay special attention to the areas between the stems where dirt can easily accumulate.
Step 2
Bring a pot of water to a rolling boil and add 0.5 Tbsp of coarse salt. Adding salt helps maintain the vibrant color of the greens and prevents them from becoming too soft. Add the rinsed sea purslane and blanch it very briefly for about 30 seconds to 1 minute. Be careful not to overcook, as it will lose its crisp texture.
Step 3
Immediately rinse the blanched sea purslane under cold water to cool it down. After rinsing well, gently press it with your hands to squeeze out as much water as possible. If not squeezed properly, the dressing will be diluted, so pressing firmly is recommended. Place the squeezed sea purslane in a bowl.
Step 4
Now, let’s make the delicious seasoning! In the prepared bowl, add 0.5 Tbsp of anchovy sauce, a pinch of salt, 0.5 Tbsp of minced garlic, and 1 Tbsp of fragrant sesame oil. Finally, sprinkle a generous amount of sesame seeds on top for a nutty flavor and appealing look.

Gently toss and mix the ingredients with your hands until the seasoning is evenly distributed throughout the sea purslane. The key is to mix gently to avoid mashing the delicate greens. Taste the salad and if it’s not seasoned enough, add a tiny bit more salt or anchovy sauce.
