Main Ingredients
  • Spring cabbage (Bomdong) 250g (approx. 6 handfuls after preparation)
  • 1/4 onion

Dressing
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp anchovy sauce or fish sauce
  • 1 Tbsp water
  • 2 Tbsp chopped green onions
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1/2 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Thoroughly wash the spring cabbage under running water, ensuring you clean between the leaves to remove any dirt. Gently shake off excess water. Then, tear the leaves into bite-sized pieces by hand. Tearing rather than cutting helps maintain the crisp texture.

Step 2

Peel the onion and slice it thinly into thick shreds. In a mixing bowl, combine all the dressing ingredients: gochugaru, anchovy sauce (or fish sauce), water, chopped green onions, minced garlic, and sugar. Whisk them together until well combined to create the flavorful dressing. Letting the dressing sit for a few minutes allows the flavors to meld beautifully.

Step 3

Place the prepared spring cabbage and sliced onion into a large bowl. Pour the dressing evenly over the vegetables. Using your hands, gently toss the ingredients together. Avoid mashing the cabbage; mix just enough until it’s lightly coated and slightly wilted. Finally, add the sesame oil and toasted sesame seeds, and give it a final gentle toss. This adds a wonderful nutty aroma. Your delicious spring cabbage salad is ready to be enjoyed immediately, or you can chill it in the refrigerator for a more refreshing taste.
