Main Ingredients
- 3 bundles of laver (gim or nori)
- 1/4 radish (or to your preference)
- 2 Tbsp coarse sea salt (for salting)
Dressing Ingredients
- 2 Tbsp soy sauce (onion-infused soy sauce or regular soy sauce)
- 4 Tbsp vinegar
- 2 Tbsp sugar
- 1/2 Tbsp minced garlic (optional)
- 1 Tbsp sesame oil (optional)
- 1/4 tsp salt (for seasoning adjustment)
- 2 Tbsp chopped scallions (white parts preferred)
- 1 Tbsp toasted sesame seeds
- 2 Tbsp soy sauce (onion-infused soy sauce or regular soy sauce)

- 2 Tbsp sugar
- 1/2 Tbsp minced garlic (optional)
- 1 Tbsp sesame oil (optional)
- 1/4 tsp salt (for seasoning adjustment)

Cooking Instructions
Step 1
First, wash the radish thoroughly, peel it, and then cut it into thin julienne strips. Aim for a consistent thickness of about 0.3 cm.
Step 2
Add 2 tablespoons of coarse sea salt to the julienned radish and gently mix by hand. Let it sit for 10 minutes to salt. This process draws out excess moisture, making the radish crispier and allowing it to absorb flavors better.
Step 3
Rinse the laver thoroughly under running water multiple times to remove any dirt or impurities. After rinsing, place the laver in a colander to drain the excess water.
Step 4
After 10 minutes, rinse the salted radish under cold running water 2-3 times to remove the saltiness. Squeeze out the excess water firmly but avoid squeezing too hard, as it might reduce the radish’s crispness.
Step 5
Squeeze out any remaining water from the drained laver with your hands. Cut the laver into bite-sized pieces, about 2-3 cm in length. If they are too long, they might be difficult to mix.
Step 6
Now it’s time to combine all the ingredients and add the dressing. Place the squeezed radish and the cut laver into a mixing bowl.
Step 7
Add the soy sauce, vinegar, sugar, chopped scallions, and toasted sesame seeds (and optional minced garlic and sesame oil) to the bowl. Gently mix everything together with your hands until well combined. Taste and add salt at the end to adjust the seasoning. If you prefer a tangier taste, add more vinegar; if you like it sweeter, add more sugar, adjusting to your preference.
Step 8
Once everything is evenly mixed and seasoned, transfer the delicious laver salad to a serving plate. It can be enjoyed immediately, or you can let it sit for a short while to allow the flavors to meld further, making it even more delicious.
