Simple Seolleongtang Seaweed Soup Recipe Using Store-Bought Seolleongtang Broth

- 500ml Store-bought Seolleongtang (1 pouch)
- 700ml Water (or stock)

Cooking Instructions
Step 1
First, soak the 15g of dried seaweed in cold water for about 5 minutes until it becomes soft and pliable. Gently rub the seaweed with your hands to wash it thoroughly, rinsing several times to remove any excess saltiness or impurities. Squeeze out any excess water. This step is crucial for a tender texture and to remove any unpleasant bitterness.
Step 2
Heat a pot over medium-low heat and add 2 tablespoons of perilla oil. Once the oil is warm, add the prepared seaweed and stir-fry for about 1-2 minutes. Stir-frying helps to release the nutty aroma of the perilla oil into the seaweed and removes any raw sea smell, ensuring a more pleasant flavor.
Step 3
After stir-frying the seaweed, pour in the 500ml of store-bought Seolleongtang and 700ml of water to create a total of 1.2 liters of rich broth. Bring the soup to a boil over high heat. As it starts to boil, carefully skim off any foam that rises to the surface; this will result in a clearer, cleaner broth. Once skimmed, stir in 1 tablespoon of minced garlic and 1 tablespoon of fish sauce for added umami. Cover the pot, reduce the heat to medium, and simmer for about 15 minutes, allowing the seaweed to become very tender.
Step 4
After 15 minutes, check if the seaweed is tender and well-integrated into the broth. Season the soup with salt to your preference and add a pinch of pepper for extra flavor.
