Rich Jujube Cake

Main Ingredients
- 170g pitted jujubes
- 250g soy milk
- 80g grapeseed oil
- 150g whole wheat flour (e.g., Korean ‘Uri Mil’ brand)
- 80g walnuts
- 200g water

Cooking Instructions
Step 1
First, remove the seeds from 80g of the pitted jujubes. Place these prepared 80g of jujubes along with 250g of soy milk into a blender. Blend until you achieve a very smooth puree. Ensure the jujube pulp is fully incorporated for a smooth texture.
Step 2
To the smooth jujube and soy milk mixture, add 80g of grapeseed oil for a tender crumb, 120g of sugar for sweetness, 1/4 tsp of salt to enhance flavors, and 1/4 tsp of cinnamon powder for a warm aroma. Whisk everything together until well combined and no lumps remain. Thoroughly mix to ensure all ingredients are evenly distributed.
Step 3
Now it’s time to incorporate the dry ingredients. Add 150g of whole wheat flour (sifted twice for better texture), 1/2 tsp of baking soda, and 1 tsp of baking powder. Gently fold these into the wet ingredients using a spatula or whisk until just combined. Be careful not to overmix; this will help keep your cake tender.
Step 4
Once the batter is partially mixed, add the remaining 90g of jujubes (pitted and weighed after pitting) which have been soaked in water for about 30 minutes until softened, and 80g of walnuts (roughly chopped or whole). Gently fold these into the batter with a spatula until they are evenly distributed. Avoid overmixing, as this can lead to a tough cake.
Step 5
Pour the prepared batter into a cake pan or muffin tins. Bake in a preheated oven at 180°C (350°F) for 30 to 35 minutes. The cake is done when a skewer inserted into the center comes out clean. Baking time may vary depending on your oven. Once baked, remove the cake from the pan and let it cool completely on a wire rack.
