Ryu Soo-young’s Simple Yet Flavorful Egg Fried Rice Recipe

Inspired by a delicious-looking recipe from the TV show ‘Shik-Sin Dang’ (편스토랑), this is my rendition of Ryu Soo-young’s famous egg fried rice. It uses simple ingredients to achieve a surprisingly deep and rich flavor, making it perfect for anyone to try.

Main Ingredients
  • 1/2 to 1 stalk Green Onion (white parts preferred)
  • 1 Egg
  • 1 pack Instant Rice (e.g., Hetbahn)

Seasoning
  • 1 Tbsp Fish Sauce
  • 1/2 Tbsp Sugar
  • Pinch of Salt
  • 1/2 Tbsp Sesame Oil

Cooking Instructions

Step 1

Add a generous amount of cooking oil to a frying pan over medium heat. Allow the pan to heat up, preparing it for the ingredients to be stir-fried.

Step 2

Finely mince the white parts of the green onion. Add the minced green onion to the heated pan and stir-fry over medium-low heat to extract plenty of green onion oil. Once the green onion is golden brown, your fragrant scallion oil is ready.

Step 3

Once the scallion oil has infused its flavor, add 1 Tbsp of fish sauce and 1/2 Tbsp of sugar. Quickly stir to combine over low heat. Be careful not to burn the fish sauce and sugar. This step creates a flavorful seasoning base.

Step 4

Add the instant rice to the pan. Use a spatula to break up any clumps and stir-fry the rice until it is well combined with the seasoning. Ensure each grain of rice is coated.

Step 5

Push the rice to one side of the pan to create an empty space. Crack the egg into the empty space, sprinkle with a pinch of salt, and scramble it using chopsticks or a spatula until cooked through. Once the scrambled egg is formed, mix it with the rice.

Step 6

Just before turning off the heat, drizzle in 1/2 Tbsp of sesame oil and gently mix the rice and scrambled egg together. Alternatively, you can place the scrambled egg at the bottom of a rice bowl, then pack the fried rice on top. Cover the bowl with a plate and invert it for a beautifully presented fried rice. A final drizzle of sesame oil on top enhances the nutty aroma.
