Effortless Samgyetang Risotto

While making a simplified Samgyetang, I decided to try a fusion twist using risotto! It’s a delightful blend of luxurious Western cuisine and healthy Korean comfort food. When you have guests over, surprise them with a unique take on Samgyetang! *Great as a convenient home meal.*

Ingredients
  • 1 piece Chicken breast
  • 1 Korean ginseng root
  • 4-5 Dried jujubes
  • 3 Chestnuts
  • 1 to 1.5 Tbsp Pine nuts
  • 1/2 Onion
  • 2 cloves Garlic
  • 15cm segment Green onion

Seasoning
  • 200ml to 400ml Chicken broth
  • 120ml Cheongju (rice wine) or White wine
  • 30 to 50g Parmesan cheese
  • 100 to 150ml Heavy cream
  • Salt to taste
  • Pepper to taste

Cooking Instructions

Step 1

Soak the rice for 30 minutes. After soaking, drain it thoroughly in a sieve to remove excess water.

Step 2

Slice the chicken breast thinly. Season it with salt, pepper, and cheongju. Sauté only half of the chicken; cooking it all through now will make it tough later. Set aside the partially cooked chicken.

Step 3

Finely mince the onion and garlic. Slice the green onion into thin rounds.

Step 4

Finely chop the ginseng root, jujubes, and chestnuts. Prepare the pine nuts as well.

Step 5

Sauté the minced onion and garlic in a pan until fragrant. Add the soaked rice and stir-fry until the grains become slightly translucent. Pour in the cheongju and bring to a boil.

Step 6

Once the alcohol from the cheongju has evaporated, add the chopped ginseng, jujubes, and chestnuts. Pour in the chicken broth and cook, stirring occasionally, until the rice is tender and the liquid has been absorbed. You may need to add more broth depending on how quickly the rice cooks and your desired consistency.

Step 7

When the rice is cooked to your liking, stir in the heavy cream and the reserved chicken.

Step 8

Allow the cream to thicken slightly. Finish the risotto by stirring in the Parmesan cheese and the sliced green onions. Season with salt and pepper as needed.
