Egg Salad Ingredients
- 3 hard-boiled eggs
- 3 Tbsp mayonnaise
- 1/2 Tbsp curry powder
- 3 Tbsp chopped onion
- 2 Tbsp chopped red bell pepper
- 3 Tbsp canned corn
- 2 slices of shredded (sandwich-sliced) ham
- 1/6 cucumber, finely chopped
- 3 hard-boiled eggs
- 3 Tbsp mayonnaise
- 1/2 Tbsp curry powder
- 3 Tbsp chopped onion
- 2 Tbsp chopped red bell pepper
- 3 Tbsp canned corn
- 2 slices of shredded (sandwich-sliced) ham
- 1/6 cucumber, finely chopped
Cooking Instructions
Step 1
In a bowl, place the 3 hard-boiled eggs and mash them using a fork. It’s nice to leave some texture rather than mashing them too finely, as this adds to the mouthfeel.
Step 2
To the mashed eggs, add 3 Tbsp of chopped onion, 2 Tbsp of chopped red bell pepper, 3 Tbsp of canned corn, 1/6 finely chopped cucumber, and 2 slices of shredded ham. Then, mix in 3 Tbsp of mayonnaise for creaminess and 1/2 Tbsp of curry powder for a subtle aroma. Gently combine all ingredients until well incorporated, ensuring no clumps and a cohesive mixture.
Step 3
Now it’s time to assemble the sandwiches. Spread the prepared egg salad generously over 6 slices of bread. Ensure the salad reaches close to the edges, then top with the remaining 6 slices of bread to form the sandwiches. Gently press down on the center of each sandwich with the bottom of a rice bowl. This helps shape the sandwich nicely and secures the filling.
Step 4
Finally, trim the edges of the sandwiches for a neat presentation. Carefully cut off the crusts of the sandwiches using a utility knife or a sharp knife.
