Mung Bean Sprout Salad Ingredients
  • 1 bag Mung Bean Sprouts (approx. 300g)
  • 2 Tbsp Soy Sauce
  • 1/3 Tbsp Salt (or Guk-ganjang, for seasoning)
  • 1 Tbsp Sesame Oil
  • A pinch of Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, prepare one bag of fresh mung bean sprouts. Open the bag, check the condition of the sprouts, and we’ll wash them thoroughly before use.

Step 2

Bring a generous amount of water to a boil in a pot for blanching the sprouts. Boiling water is key to keeping the sprouts crisp.

Step 3

Rinse the mung bean sprouts several times under running water to remove any dirt or impurities. It’s especially important to clean out debris from the roots or between the sprouts. After rinsing, place them in a colander to drain.

Step 4

Once the water is boiling vigorously, carefully add the prepared mung bean sprouts to the pot. Adding the sprouts might momentarily lower the water temperature, so keep the heat on high.

Step 5

After adding the sprouts and the water returns to a boil, blanch them for just 30 seconds to 1 minute. Blanching for too long will make the sprouts mushy and lose their crispness, so be mindful! Keep them crisp by blanching briefly!

Step 6

Immediately after blanching, place the mung bean sprouts in a colander to quickly drain the hot water. Do not rinse them under cold water, as this will affect their crisp texture. Shake the colander well to remove as much moisture as possible.

Transfer the drained mung bean sprouts to a large bowl. It’s easier to season them once the initial heat has dissipated a bit.

Now it’s time to add the seasonings. First, sprinkle 2 tablespoons of soy sauce evenly over the sprouts. This will add a savory and umami flavor.

Add 1/3 tablespoon of salt (or guk-ganjang, Korean soup soy sauce) to adjust the seasoning to your preference. It’s best to adjust the amount of salt according to your taste. Start with a little and add more if needed after tasting.

Add 1 tablespoon of sesame oil generously to enhance the nutty aroma. The rich fragrance of sesame oil will elevate the flavor of the sprout salad.

Gently mix the sprouts with the seasonings using your hands. Be careful not to over-mix or mash the sprouts; the key is to toss them gently until the seasonings are evenly distributed.
