Simple and Delicious Vegetable Doenjang Jjigae Recipe

This is a Doenjang Jjigae made with homemade doenjang I fermented this year. Although it hasn’t fully matured yet, it has a wonderfully savory flavor. You can taste the freshness of newly made doenjang. Let’s make a simple doenjang jjigae that will add warmth to your family’s dinner table!

Main Ingredients
  • 1 King Oyster Mushroom (sliced into bite-sized pieces)
  • 1 Onion (chopped into bite-sized pieces)
  • 1/2 block Firm Tofu (cut into bite-sized cubes)
  • 5 Korean Green Chili Peppers (adjust to taste, thinly sliced diagonally)
  • 1 stalk Green Onion (sliced diagonally)
  • 1/4 Zucchini (sliced into half-moons or cubes)

Seasoning & Broth
  • 1.5 bowls Anchovy-Kelp Broth (more flavorful than plain water)
  • 2.5 Tbsp Homemade Doenjang (adjust based on saltiness)
  • 1 Tbsp Gochugaru (Korean chili flakes, optional, add for extra spice)

Cooking Instructions

Step 1

Wash all the vegetables and tofu thoroughly, as they are key to the flavor of the doenjang jjigae. Slice the king oyster mushrooms, onion, and zucchini into bite-sized pieces. Cut the tofu into similar bite-sized cubes. Thinly slice the Korean green chili peppers diagonally for a touch of heat, and slice the green onion diagonally as well.

Step 2

Pour 1.5 bowls of the anchovy-kelp broth into a pot. Add the sliced onion, king oyster mushrooms, and zucchini first. Bring to a rolling boil over high heat. The fresh flavors from the vegetables will add depth to the soup.

Step 3

Once the broth is boiling and the vegetables are slightly cooked, dissolve 2.5 Tbsp of homemade doenjang into the pot. It’s best to use a sieve to ensure there are no clumps. Stir well with a spoon to combine the doenjang evenly with the broth and let it simmer.

Step 4

After the doenjang has dissolved and the stew starts to simmer again, add the sliced Korean green chili peppers, green onion, and tofu. If you prefer a spicier soup, add 1 Tbsp of gochugaru. Continue to simmer until all ingredients are well combined.

Step 5

Your savory vegetable doenjang jjigae is now complete! Enjoy the harmonious blend of the fresh, homemade doenjang and the refreshing taste of the vegetables. It’s perfect served with a warm bowl of rice.
