Savory Mandu Cold Soup
A Refreshing and Unique Mandu Dish to Beat the Heat: Mandu Cold Soup
I’ve created a unique Mandu dish, Mandu Cold Soup, a delightful twist on traditional cold soup! Instead of noodles, I’ve added chewy Mandu (dumplings), and the texture and flavor are simply exquisite. It’s a must-try for a refreshing summer meal!
Mandu Cold Soup Ingredients
- 9 Mandu (dumplings)
- 30g Cabbage
- 1/2 Onion
- 30g Red Cabbage
- 1/3 Carrot
- 3 Lettuce leaves
- 5 Perilla leaves
- 30g Crown Daisy (or edible chrysanthemum greens)
- A little Bean Sprouts (or radish sprouts)
- 1 Egg
- A little Cooking oil
Special Cold Soup Broth
- 2 Small Tomatoes
- 1/2 Onion
- 3 Tbsp Lemon juice
- 1 Packet of ready-made Naengmyeon broth (cold buckwheat noodle soup base)
- 0.5 Tbsp Soy sauce
- 50ml Sparkling water
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Oligodang (corn syrup or rice syrup)
- 1 Tbsp Brown sugar
- 2 Tbsp Maesilcheong (green plum syrup)
- 1 Tbsp Minced garlic
- 1 Tsp Mustard (Korean mustard or Dijon)
- 1 Tbsp Sesame oil
- A little Sesame seeds
- 2 Small Tomatoes
- 1/2 Onion
- 3 Tbsp Lemon juice
- 1 Packet of ready-made Naengmyeon broth (cold buckwheat noodle soup base)
- 0.5 Tbsp Soy sauce
- 50ml Sparkling water
- 1 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Oligodang (corn syrup or rice syrup)
- 1 Tbsp Brown sugar
- 2 Tbsp Maesilcheong (green plum syrup)
- 1 Tbsp Minced garlic
- 1 Tsp Mustard (Korean mustard or Dijon)
- 1 Tbsp Sesame oil
- A little Sesame seeds
Cooking Instructions
Step 1
First, thoroughly wash and prepare all the ingredients for your Mandu Cold Soup, including the fresh vegetables and dumplings. Chop the vegetables like carrots, onions, and cabbage into manageable sizes.
Step 2
Arrange the Mandu in a steamer basket without overcrowding them. Steam over high heat for about 7 to 9 minutes, ensuring they are fully cooked through. This steaming process will keep the Mandu skins delightfully chewy.
Step 3
Once steamed, transfer the Mandu to a wide bowl to cool slightly. This helps them retain their chewy texture and prevents them from becoming mushy.
Step 4
Finely julienne all the prepared vegetables, including cabbage, red cabbage, carrot, lettuce, and perilla leaves. Aim for thin, crisp strips for the best texture.
Step 5
Cut the tomatoes and onion for the broth into moderate pieces suitable for blending. Place these chopped ingredients into a blender along with the sparkling water and about 100ml of plain water (or use more sparkling water). Blend until you have a smooth, fresh juice.
Step 6
Pour the ready-made Naengmyeon broth into a large bowl. Add the blended tomato-onion juice from the blender. Now, incorporate all the remaining seasoning ingredients: lemon juice, soy sauce, Gochujang, Oligodang, brown sugar, Maesilcheong, minced garlic, mustard, sesame oil, and sesame seeds.
Step 7
Whisk everything together thoroughly with a whisk or spoon until well combined. This creates your delicious Mandu Cold Soup broth! For an even deeper and more complex flavor, chill the broth in the refrigerator for 2 to 6 hours to allow the flavors to meld.
Step 8
Crack one egg into a small pan with a little oil. Make a thin omelet. Once cooked and slightly cooled, use a flower-shaped cookie cutter to create decorative egg garnish flowers for topping.
Step 9
Select a wide, shallow bowl for serving. Arrange the steamed and cooled Mandu in a decorative spiral pattern. You can start from the center and work outwards, or arrange them around the rim.
Step 10
Fill the empty spaces between the Mandu with the colorful julienned vegetables you prepared earlier. Arrange them artfully to create a visually appealing contrast. Add a small amount of bean sprouts or radish sprouts for a fresh garnish.
Step 11
Finally, pour the chilled, specially prepared cold soup broth generously over the Mandu and vegetables, ensuring they are well-covered. The broth should partially submerge the ingredients.
Step 12
Top the dish with the beautiful egg flower garnishes you made. Your refreshing and unique Mandu Cold Soup is now complete! Enjoy this delightful culinary creation.
