Savory Pizza Rabokki: Repurposing Leftover Pizza

I tried cooking leftover pizza with rabokki (spicy Korean instant noodles). It’s surprisingly delicious!
Pizza Rabokki Ingredients
- 1 packet instant noodles (ramyeon)
- 1 slice leftover pizza
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 1 Tbsp soy sauce
- 1/2 Tbsp ramyeon soup powder
- 500ml water
- 1 swirl of corn syrup (approx. 1/2 Tbsp)

Cooking Instructions
Step 1
In a wide pan or pot, combine the water (500ml) with the gochujang (1 Tbsp), gochugaru (1 Tbsp), sugar (2 Tbsp), soy sauce (1 Tbsp), and ramyeon soup powder (1/2 Tbsp). Stir well to dissolve the seasonings, then turn the heat to medium. It’s important to let the sauce base simmer and develop flavor before adding the noodles.
Step 2
Once the seasoned water comes to a boil, add the instant noodles and the vegetable/flake packet that comes with the ramyeon. To achieve a less soupy consistency, maintain high heat. Keep stirring to prevent the noodles and sauce from sticking to the bottom of the pan.
Step 3
While the noodles are cooking, cut the leftover pizza slice into bite-sized pieces. If your pizza has been frozen, a quick 1-minute defrost in the microwave will make it easier to break apart and integrate into the dish.
Step 4
Once the noodles are nearly cooked, stir in the corn syrup (about a swirl, or 1/2 Tbsp) for a glossy finish. Check if the noodles are tender. When the noodles are cooked to your liking, reduce the heat to medium.
Step 5
Now, add the cut pizza pieces and the mozzarella cheese (if using) over the rabokki. Stir gently to ensure the pizza doesn’t stick to the pan as the cheese begins to melt.
Step 6
Reduce the heat to low, cover the pan with a lid, and let it cook for another minute. This step allows the pizza to soften further and the cheese to melt completely, blending beautifully with the rabokki. Patience here allows the pizza flavors to infuse into the dish.
Step 7
Transfer the perfectly combined Pizza Rabokki to a serving bowl. It’s ready to enjoy! For an even more satisfying meal, consider serving it with a hard-boiled egg. Enjoy this creative and delicious way to use up leftover pizza!
