Ingredients for Roasted Garlic Anchovy Stir-Fry
- 1 cup anchovies
- 1 cup garlic
Seasoning for Roasted Garlic Anchovy Stir-Fry
- 1 Tbsp oil
- 1 Tbsp sesame oil
- 1/2 Tbsp sugar
- 2 Tbsp plum extract
- 1/2 Tbsp corn syrup
- A pinch of salt
- 1 Tbsp oil

Cooking Instructions
Step 1
To prepare the anchovy stir-fry, I took out the anchovies, but they were quite crumbly, perhaps because they were near the end of their supply. I gently shook them in a sieve and lightly stir-fried them in a dry wok before setting them aside.
Step 2
After wiping the wok used for the anchovies with a tissue, I added 1 Tbsp of oil and carefully roasted the garlic over medium heat until golden brown, just like searing meat. Once nicely browned, I took them out.
Step 3
For the seasoning of the roasted garlic anchovy stir-fry, I added 1 Tbsp sesame oil, 1/2 Tbsp sugar, 2 Tbsp plum extract, and a pinch of salt to the remaining oil in the wok after roasting the garlic. I brought it to a gentle simmer.
Step 4
Then, I added the roasted garlic and the pre-stir-fried anchovies to the wok and tossed them quickly. After turning off the heat, I added 1/2 Tbsp of corn syrup and mixed it in just once. This completes the roasted garlic anchovy stir-fry that my daughter loves so much!
