Main Ingredients
  • 300g frozen shrimp (peeled and deveined)
  • 2 heads of bok choy
  • 2 shiitake mushrooms
  • A little bit of carrot (approx. 20g)
  • 1L water

Shrimp Ball Mixture Ingredients
  • 2 Tbsp minced green onion
  • 0.5 Tbsp minced garlic
  • 1 egg white
  • 3 Tbsp starch (potato starch or corn starch)
  • 1 Tbsp anchovy sauce
  • A pinch of salt
  • A pinch of pepper

Cooking Instructions

Step 1

Thaw the frozen shrimp by soaking them in cold water for 10 to 30 minutes. If the shrimp have tails, remove them for easier eating. After thawing, pat the shrimp thoroughly dry with a paper towel; this step is crucial for a good texture in the balls.

Step 2

Pour 1L of water into a pot and add 1 chicken stock cube or 1 tablespoon of chicken powder to create a flavorful broth. While the broth is simmering, prepare the other ingredients.

Step 3

Slice the carrot and shiitake mushrooms into bite-sized pieces, about 1cm thick. For the bok choy, trim the base and separate the leaves into 2-3 pieces.

Step 4

Finely mince the thawed and dried shrimp. You can use a food processor or a knife. If you prefer some texture, avoid mincing them too finely; leaving small pieces of shrimp is also delicious.

Step 5

In a large bowl, combine the minced shrimp and 2 tablespoons of minced green onion. To separate the egg white from the yolk cleanly, you can use the eggshell. Add only the egg white from 1 egg. (You can use the yolk for another dish!)

Step 6

Now, add the remaining ingredients for the mixture. Add 3 tablespoons of starch, 0.5 tablespoon of minced garlic, 1 tablespoon of anchovy sauce, a pinch of salt, and a pinch of pepper. Mix everything thoroughly with a spatula or spoon.

Step 7

Kneading the mixture well is a vital step. Use a spoon or your hands to vigorously knead the mixture against the side of the bowl for at least 100 times. This ensures the shrimp and other ingredients bind together tightly, resulting in firm, delicious balls that won’t fall apart during cooking.

Step 8

Once the broth is boiling vigorously, it’s time to add the shrimp balls. Using two spoons makes it easier to shape them nicely. Scoop some mixture onto one spoon, then use the other spoon to shape it into a round ball before dropping it into the boiling broth. Avoid making the balls too large, as they may not cook through properly; aim for bite-sized portions. The shrimp balls will float to the surface when they are cooked.

Step 9

When the shrimp balls are almost cooked and floating, add the prepared shiitake mushrooms and carrots to the pot. Once the vegetables are slightly tender, add the bok choy last. Cook the bok choy just until wilted to maintain its crisp texture and fresh flavor.

Step 10

Finally, taste the soup and adjust the seasoning. If needed, add a little more soy sauce or salt to suit your preference. Enjoy your delicious shrimp ball soup!
