Ingredients
  • 5 cloves garlic (thinly sliced)
  • 3 shiitake mushrooms (sliced into bite-sized pieces)
  • 2 heads bok choy (washed and cut into large pieces, including the base)
  • 7 peeled and deveined shrimp
  • 4 imitation crab sticks (shredded)
  • 1 Tbsp ginger paste
  • 2 Tbsp cooking oil
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1.5 servings pasta or fresh noodles

Cooking Instructions

Step 1

First, let’s check out the ingredients! The chef used fresh noodles, but since we didn’t have any, we considered using ramen but decided to go with spaghetti noodles instead.

Step 2

Next, we’ll cook the noodles. For spaghetti, bring a pot of water to a boil with a pinch of salt, and cook for about 8 minutes until al dente. It’s a good idea to reserve some of the pasta water.

Step 3

Wash the bok choy thoroughly. Cut it into large, bite-sized pieces, making sure to include the slightly sweet base for extra flavor and texture.

Step 4

Slice the mushrooms into pieces that are easy to eat. Thinly slice the garlic, and if you’re using imitation crab sticks, shred them so they absorb the sauce better.

Step 5

Now, heat a generous amount of cooking oil in a pan. Add the sliced garlic and shrimp, and stir-fry. Adding the ginger paste at this stage really enhances the aroma and flavor!

Step 6

Next, add the bok choy and shiitake mushrooms to the pan. Keep stir-frying quickly! We want to maintain the crispness of the vegetables.

Step 7

Let’s start adding the seasonings for that authentic Chinese flavor. First, add the cooking wine to help remove any fishy odors and add a pleasant aroma.

Immediately follow with the soy sauce and stir-fry for a moment. This allows the deep umami flavor of the soy sauce to meld with the other ingredients.

Add the shredded imitation crab sticks, and then incorporate the oyster sauce – the key to that rich, savory taste. Stir-fry again until everything is well combined and coated with the sauce.

Now, add the cooked noodles to the pan. If the mixture seems too dry and difficult to stir-fry, gradually add a little of the reserved pasta water to keep everything moist and help the ingredients combine smoothly.

Once the sauce has evenly coated the noodles and other ingredients, it’s time to get ready to plate your delicious stir-fried noodles. It looks so appetizing!

After making it myself, I found that while pasta noodles are good, using soft fresh noodles or quick-cooking ramen noodles would likely allow the flavors to penetrate even better, resulting in an even more delicious dish. I’ll definitely try it with different noodles next time!
