Main Ingredients
  • Spaghetti 1/2 serving (approx. 50-60g)
  • Olive oil 0.5 Tbsp
  • Oyster mushrooms 1 handful (approx. 30g)
  • Green bell pepper 1/4
  • Cabbage 1 handful (approx. 30g)
  • Ham 1 handful (approx. 30g)
  • Minced garlic 0.5 Tbsp
  • Cooking oil 0.5 Tbsp

Soy Sauce Sauce
  • Water 1/2 cup (100ml)
  • Soy sauce 2 Tbsp
  • Sugar 0.5 Tbsp
  • Cooking wine (Mirin or Sake) 1 Tbsp
  • Cornstarch or potato starch 2 Tbsp
  • Sesame oil, a drizzle

Cooking Instructions

Step 1

Bring a large pot of water to a boil. Add 0.5 Tbsp of olive oil to the boiling water and cook the spaghetti according to package directions, but aim for about 1 minute less than the recommended time for an ‘al dente’ texture. (It will cook further in the pan.)

Step 2

While the spaghetti is cooking, thinly julienne all the prepared vegetables and ham. If using oyster mushrooms, remove the tough ends and either shred them or slice them along the grain.

Step 3

Once the spaghetti is cooked, drain it thoroughly in a colander. Do not rinse it with cold water!

Step 4

Heat 0.5 Tbsp of cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic. Then, add the julienned vegetables and ham. Stir-fry over medium heat until the vegetables are slightly softened but still have a bit of crispness. This will enhance the texture.

Step 5

Once the vegetables and ham are stir-fried to your liking, pour in the prepared soy sauce mixture (water, soy sauce, sugar, cooking wine, cornstarch/potato starch). Whisk constantly and bring to a simmer. Cook until the sauce thickens to a glossy consistency. Ensure the cornstarch or potato starch is fully dissolved to avoid lumps.

Step 6

Add the drained spaghetti to the thickened sauce. Toss quickly to coat the noodles evenly with the sauce. Finish with a drizzle of sesame oil for extra flavor. Your delicious soy sauce spaghetti is ready to be enjoyed immediately!
