Main Ingredients
  • 100g minced pork
  • 1 Tbsp minced garlic (15ml)
  • A little scallion, finely chopped
  • 1 pack silken tofu (approx. 300-400g)
  • Slurry (1 Tbsp cornstarch + 2 Tbsp water, mixed)
  • 1 serving warm rice
  • A little chopped chives (for garnish)

Sauce Ingredients
  • 2 Tbsp soy sauce (30ml)
  • 1 Tbsp oligodang (corn syrup/oligo syrup) (15ml)
  • A pinch of black pepper
  • 1.5-2 Tbsp Mala sauce (adjust to your spice preference)
  • 1/2 cup water (100ml)
  • 1/2 Tbsp oyster sauce (7.5ml)

Cooking Instructions

Step 1

Heat a large pan over medium heat. Add the minced pork and stir-fry until it becomes crumbly, rendering out the fat. Once the pork is cooked, add the minced garlic and finely chopped scallions, and stir-fry for about 1 minute until fragrant.

Step 2

Pour in 2 Tbsp soy sauce, 1 Tbsp oligodang, and 2 Tbsp water into the pan. Stir-fry over medium-low heat for 1-2 minutes until the sauce is absorbed by the pork, seasoning it well. This pre-seasoning step adds a deeper flavor.

Step 3

Now, let’s add that spicy kick! Add 1.5-2 Tbsp of Mala sauce and 1/2 cup (100ml) of water to the pan. Stir everything together and let it come to a boil, then reduce the heat slightly.

Step 4

Gently add the silken tofu, either cut into large pieces or scooped with a spoon, into the sauce. Carefully mix to coat the tofu evenly with the sauce and simmer for 1-2 minutes, allowing the flavors to meld.

Step 5

Prepare the cornstarch slurry to thicken the sauce. In a small bowl, mix 1 Tbsp cornstarch with 2 Tbsp water until smooth. Gradually pour the slurry into the simmering tofu mixture while stirring until you reach your desired thick consistency. Once thickened, turn off the heat.

Step 6

Finally, taste and adjust seasoning. If it’s not salty enough, add another 1/2 Tbsp of oyster sauce (7.5ml) for an extra boost of umami. Oyster sauce will further enhance the complexity of the dish.

Step 7
