Porridge Ingredients
  • 2.5 cups short-grain rice
  • 2.5 cups glutinous rice
  • 2 handfuls spinach (approx. 100g)
  • 4 Tbsp miso paste (40g)
  • 300g ground pork
  • 2 medium potatoes
  • 1/2 onion
  • 1 Tbsp minced garlic
  • A little sesame oil

Cooking Instructions

Step 1

First, wash the spinach thoroughly, drain any excess water, and chop it into bite-sized pieces, about 1-2 cm long. Set aside.

Step 2

Heat a little sesame oil in a deep pot or wok over medium-high heat. Add the minced garlic and sauté until fragrant. Then, add the ground pork and break it up with a spoon, stirring to ensure it doesn’t clump. Cook until the pork is no longer pink and fully cooked through; this step is crucial for developing flavor.

Step 3

Peel the potatoes and dice them into small pieces, about 0.5 cm in size. Dicing them uniformly will help them cook evenly and quickly.

Step 4

Peel the onion and finely dice it, similar to the potatoes.

Step 5

Add the rice, which has been soaked in water for at least 30 minutes and then drained, to the pot with the cooked pork. Stir-fry together for about 2-3 minutes until the rice grains become slightly translucent. Stirring the rice enhances the nutty flavor of the porridge.

Step 6

Once the rice grains begin to turn translucent, pour in 6-8 cups (approx. 1.2-1.6 liters) of water or dashi broth. You can adjust the amount of liquid based on your desired porridge consistency. It’s recommended to start with 6 cups and add more if needed while simmering.

Step 7

Before adding the miso, dissolve it in a small amount of water or broth until smooth and lump-free. The saltiness of miso paste can vary by brand, so it’s best to start with about 3 tablespoons and add more to taste.

Step 8

As the liquid comes to a boil, gradually add the dissolved miso paste while stirring vigorously to prevent clumps and ensure it’s well incorporated with the rice. Continuous stirring is key to a smooth consistency.

Step 9

Now, add the chopped spinach and the diced potatoes and onions to the pot.

Stir everything together to combine well. Remember to stir occasionally to prevent the porridge from sticking to the bottom of the pot.

Step 11

Once the porridge starts to boil, reduce the heat to the lowest setting. Leave the lid slightly ajar and let it simmer for about 20-30 minutes, or until the rice grains have softened and broken down. Stir frequently to prevent sticking.

Step 12

When the rice is tender and the porridge has reached your desired consistency, it’s ready! Adjust the seasoning with salt or soy sauce if needed, and serve hot and enjoy!
