  • Boiled fern (if using dried fern, soak and boil thoroughly)
  • Grapeseed oil (or other cooking oil)

Seasoning & Aromatics
  • 1/2 Tbsp minced garlic (or garlic powder)
  • 1 Tbsp soup soy sauce (Guk-ganjang)
  • 1 Tbsp regular soy sauce (Jin-ganjang)
  • Chopped green onions
  • 1 Tbsp perilla oil or sesame oil
  • Toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

If you’re using dried ferns, soak them in cold water overnight. Rinse them thoroughly and then boil them until tender. Unboiled ferns can be tough and slightly bitter, so boiling is essential. Ferns have a cooling nature, so if you have a sensitive stomach or feel cold easily, ensure they are well-boiled and heated before consuming.

Step 2

Once boiled, drain the ferns in a colander and set aside. Heat a pan over medium heat and add a generous amount of grapeseed oil. You can use other cooking oils, but grapeseed oil offers a clean flavor.

Step 3

When the pan is hot, add the boiled ferns and minced garlic (or garlic powder). Stir-fry them together, allowing the garlic’s aroma to meld with the ferns.

Step 4

Add 1 tablespoon of soup soy sauce (Guk-ganjang) to season the ferns. This soy sauce adds a deep, savory flavor.

Step 5

Next, add 1 tablespoon of regular soy sauce (Jin-ganjang). Combining both types of soy sauce creates a richer, more balanced taste. Stir-fry until well combined. Taste the dish and if it’s not salty enough, add a little more soy sauce to adjust the seasoning.

The fern is stir-frying nicely, absorbing the seasonings. The unique aroma of fern combined with the sauce is quite appetizing.

Step 7

Once the ferns have been stir-fried for a bit, add the chopped green onions and continue to stir-fry. The refreshing taste of green onions will enhance the overall flavor profile.

Stir-fry until the green onions are slightly wilted, then turn off the heat. Finally, drizzle in 1 tablespoon of perilla oil or sesame oil for a nutty fragrance. Finishing with gentle heat helps preserve the delicate aromas.
