Stew Ingredients
  • 300g Tofu (firm or stewing type)
  • 40g Radish (about 1cm thick)
  • 2 Tbsp Sesame Oil
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Salted Shrimp (with brine)
  • 3 Tbsp Pollack Roe (roe only, membranes removed)
  • 1.3L Water or Anchovy-Dashi Broth
  • 3 Tbsp Chopped Scallions (for garnish)
  • 1 tsp Fine Red Pepper Powder (optional)

Cooking Instructions

Step 1

First, cut the tofu into bite-sized cubes or slices about 1.5cm thick. Heat 2 tablespoons of sesame oil in a pot over medium heat, then add the sliced radish and sauté for about 2 minutes until it becomes translucent. Sautéing the radish will bring out its sweetness and make the broth refreshing.

Step 2

Once the radish is lightly sautéed, add the sliced tofu and gently stir-fry together for about 1 minute. This will help the tofu cook slightly and prevent it from breaking apart too easily.

Step 3

Add 1 tablespoon of minced garlic and 1.5 tablespoons of salted shrimp (including the brine) to season. Salted shrimp forms the base flavor and adds depth to the stew. Stir and cook for about 30 seconds, being careful not to burn the ingredients by managing the heat.

Step 4

Add 3 tablespoons of pollack roe, with the roe carefully scooped out of the membranes. The saltiness and rich flavor of the pollack roe will enhance the overall umami of the stew. The seasoning from the salted shrimp and pollack roe might be sufficient, so adjust with salt at the end if needed.

Step 5

Pour in 1.3 liters of water or anchovy-dashi broth. Bring the stew to a rolling boil over high heat.

Step 6

Once the stew is boiling vigorously, reduce the heat to medium-low and simmer for another 5 to 7 minutes to allow the ingredients to cook through and the flavors to meld. Finally, stir in 1 teaspoon of fine red pepper powder and 3 tablespoons of chopped scallions to finish. The red pepper powder adds color and a hint of spice, while the scallions contribute a fresh aroma.

Step 7
