This is a super simple recipe for seasoned oyster mushrooms, featuring their chewy texture and subtle aroma. It’s a perfect, light side dish for when you have a low appetite and an excellent addition to your diet meals. We add thinly sliced chili peppers and onions for a delightful crunch and rich flavor, all seasoned with a simple yet delicious dressing.

Main Ingredients
  • 1 pack Oyster Mushrooms (approx. 200-250g)
  • 1/2 Onion
  • 4 small Korean Green Chili Peppers (Cheongyang chili)

Seasoning
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 pinches Salt (or a little soup soy sauce)
  • Generous pinch of Toasted Sesame Seeds
  • Pinch of Black Pepper (to taste)
  • 1 tsp Minced Garlic

Cooking Instructions

Step 1

First, trim the stems off the Korean green chili peppers. Slice them in half lengthwise, carefully remove the seeds, and then cut them into thin, long strips. If you enjoy a spicier kick, you can leave some of the seeds in.

Step 2

Peel the onion and also slice it into thin strips, similar to the chili peppers. Slicing them as thinly as possible will result in a softer texture and better absorption of the seasoning.

Step 3

Trim off the tough bottom part of the oyster mushrooms. Rinse them lightly under running water and gently pat them dry. Then, carefully separate the mushrooms into individual strands by hand, following their natural lines. This separation helps the seasoning penetrate better and makes them more delicious.

Step 4

Bring a pot of water to a boil. Add the prepared oyster mushrooms and blanch them for about 15 seconds – just a quick dip. It’s crucial not to overcook them, as they can become mushy. Blanching them briefly keeps them pleasantly crisp. Immediately after blanching, rinse the mushrooms under cold running water to cool them down, then firmly squeeze out as much excess water as possible with your hands.

Step 5

Place the well-drained oyster mushrooms into a mixing bowl. Using a wide bowl will make it easier to toss and combine the ingredients.

Step 6

Next, add the thinly sliced chili peppers and onions on top of the mushrooms.

Now, add all the seasoning ingredients: 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, 2 pinches of salt, and 1 teaspoon of minced garlic, according to the recipe measurements. We’ll sprinkle the toasted sesame seeds generously at the very end.

Step 8

Gently toss everything together with your hands, ensuring the seasoning is evenly distributed. Be careful not to overmix or mash the mushrooms; a gentle toss is best. Finally, sprinkle generously with toasted sesame seeds and add a pinch of black pepper to taste. Your fragrant and delicious seasoned oyster mushrooms are ready! They are delightful served immediately, or you can chill them in the refrigerator for a refreshing treat.
