  • 13 Whiteleg shrimp (peeled, deveined, rinsed, and thoroughly patted dry)
  • 1 Egg
  • Scallions, appropriate amount (chopped)

Cooking Instructions

Step 1

First, thaw the shrimp if frozen. Rinse them under cold running water and gently pat them completely dry with paper towels. Ensuring the shrimp are dry is key to achieving a good texture in your fried rice.

Step 2

Crack the egg into a small bowl and lightly beat it with a fork or whisk. Set aside, ready to be cooked.

Finely chop the scallions. Heat a skillet or wok over medium-low heat and add a small amount of canola oil. Add the chopped scallions and stir-fry until fragrant, about 1-2 minutes, allowing their aroma to infuse into the oil.

Once the scallions are fragrant, add the dried shrimp to the pan. Stir-fry over medium heat until the shrimp turn pink and are fully cooked. Be careful not to overcook them, as they can become tough.

Push the cooked shrimp and scallions to one side of the pan. Pour the beaten egg into the empty space. As the egg begins to set, gently scramble it with chopsticks or a spatula. When the egg is about 70% cooked, mix it with the shrimp and scallions and stir-fry briefly to combine.

Step 6

Now, add the cooked rice to the pan. Season with oyster sauce and a pinch of black pepper, adjusting to your personal preference. Oyster sauce can be quite potent, so start with a little and add more if needed. Use your spatula to break up any clumps of rice and stir-fry everything together until well combined and the rice is heated through. Ensure each grain of rice is coated with the flavorful sauce. Serve immediately in a bowl for a delicious and satisfying meal!
