Silken Tofu and Fresh Green Salad
Easy and Elegant Green Tofu Salad Recipe
Here’s a recipe for a refreshing and light silken tofu salad, perfect for a weekend brunch. Arrange crisp greens in a circle around a plate, leaving the center open for the star ingredient: tender silken tofu. This salad was originally inspired by a Christmas wreath, but by using seasonal vegetables and fruits, it can be beautifully adapted for any time of year. Since no cooking is involved, it’s a stunning dish that comes together with simple plating. The center can be filled with your choice of ingredients like steak, salmon, fruits, or anything you love. Drizzle your favorite dressing over the top just before serving. You can use a store-bought dressing or mix your own. Oriental or yogurt-based dressings offer a lovely tang that complements the mildness of silken tofu wonderfully.
Ingredients
- 1 pack small silken tofu (approx. 300g)
- 3 large romaine lettuce leaves
- 3 kale leaves
- 1/4 cucumber
- 1/4 apple
- 4 cherry tomatoes
- Small bunch of garlic chives or chives (optional)
- Generous amount of store-bought apple yogurt dressing or your favorite dressing
Cooking Instructions
Step 1
Wash the romaine lettuce and kale leaves thoroughly under running water. Gently pat them dry and then tear or chop them into bite-sized pieces.
Step 2
Wash the apple and cucumber. Core the apple and remove the seeds from the cucumber. Cut them into small, uniform pieces, about 1 cm in size. Halve the cherry tomatoes lengthwise or cut them into quarters.
Step 3
Carefully open the package of silken tofu. Gently wrap the tofu block in paper towels and lightly press to absorb any excess water. This step helps the tofu maintain its shape nicely on the salad.
Step 4
Select a wide, attractive serving plate. Arrange the prepared romaine lettuce and kale leaves in a circular pattern around the outer edge of the plate, creating a ‘wreath’ shape and leaving the center empty.
Step 5
Place the drained silken tofu gently in the center of the plate, within the reserved space. Then, artfully arrange the sliced cucumber, apple, and cherry tomatoes in intervals around the tofu and on top of the green wreath.
Step 6
Prepare your dressing. This could be a favorite store-bought dressing or a homemade vinaigrette made with ingredients like olive oil, balsamic vinegar, lemon juice, honey, and herbs.
Step 7
Just before you’re ready to serve and eat, generously drizzle your chosen dressing over the entire salad. For added texture and flavor, consider garnishing with extra greens or nuts.
