Tofu Seaweed Soup: A Harmony of Soft Tofu and Fresh Seaweed

  • Dried seaweed 1 handful (approx. 10g)
  • Tofu 1/2 block (approx. 150g)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 30 minutes until it becomes soft. Rinse the rehydrated seaweed several times in clean water to remove excess salt, then squeeze out the water thoroughly. Cut the seaweed into bite-sized pieces (about 3-4cm long). Heat 2 Tbsp of perilla oil in a pot over medium heat, add the prepared seaweed, and sauté for 2-3 minutes until it becomes fragrant, enhancing its savory flavor.

Step 2

Once the seaweed is softened from sautéing, add 1/2 Tbsp minced garlic, 1 Tbsp shrimp paste broth, 1 Tbsp soy sauce (fish sauce type), and 1 Tbsp soy sauce (traditional type). Sauté together for another minute, allowing the seasonings to meld with the seaweed. Then, pour in 3 bowls (approx. 600ml) of water and bring to a boil over high heat. Once the soup is vigorously boiling, skim off any impurities, reduce the heat to medium, and simmer for about 5 more minutes to allow the seaweed’s flavor to fully infuse into the broth.

Step 3

While the broth is simmering, cut the 1/2 block of tofu into large cubes. Add the prepared tofu cubes to the broth that has been simmering over medium heat for about 5 minutes. After adding the tofu, reduce the heat to very low and simmer gently for another 5 minutes. This gentle simmering ensures the tofu remains tender and doesn’t break apart, while deepening the soup’s flavor. Taste and adjust the seasoning if needed, adding a little more shrimp paste broth or soy sauce to suit your preference. Enjoy this healthy Tofu Seaweed Soup while it’s warm!
